*JOB TITLE: Sous Chef*
*DEPARTMENT: Back of House*

*POSITION PURPOSE*
This position is responsible for supporting & reinforcing the proficient operation of the culinary department operations. This includes creating and maintaining a fair and safe work environment, as well as coaching training, and developing new and existing staff members. The positon will work closely with the Executive Chef and all other management to ensure exceptional guest service is provided to of all our guests. The position will support in completing administrative duties included below.
*JOB REQUREMENTS*
· High School or equivalent education required
· Solid understanding of the restaurant, pub, and hospitality industry
· Red Seal Certification or equivalent preferred
· Sanitation and Hygiene knowledge with a good working knowledge of current applicable health laws & valid food safe
· Minimum of 3 years? experience in a kitchen management role
· Experience hiring, training, and managing, staff
· Knowledge of purchasing, cost control, and inventory
· Work efficiently in a non-supervised position
· Must be able to meet deadlines as required
· Requires good communication skills, both verbal and written
· Strong leadership skills and ability to effectively train employees
· Must have thorough working knowledge of Microsoft Office Suite, most specifically Word and basic Excel.
· Ability to prepare and analyze data figures and reports
*JOB DUTIES*
· Assist in planning, creating, and executing menus
· Establish controls to minimize food and supply waste and theft
· Develop recipes and techniques for food preparation and presentation which help to ensure consistent high quality and minimize food costs; exercise portion control over all items served and assists in establishing menu selling prices
· Assist the Executive Chef in preparing data to project annual food and labour costs and monitor actual financial results; take corrective action where necessary to help assure that financial goals are met
· Safeguard all food preparation by ensuring the appropriate training is done to increase knowledge of safety, sanitation, and accident prevention principles
· Assure that quality standards are consistently attained and properly executed
· Confirm all regulatory health and safety codes are followed
· Participate in daily, weekly, and monthly reports and other reports as requested
· Schedule and coordinate the work of all kitchen staff members
· Cook or directly supervise the cooking of items that require specialty preparation
· Attend weekly and monthly management meetings
· Monitor uniform needs, inventory and expenses
· Adjust monthly inventory costs and send it to head office on the 1st of each month
· Assist with recruiting, interviewing and hiring new staff members
· Maintain paperwork and execute administrative duties
· Ensure all hours are entered in Focus (including managers) for payroll reports.
· Monitor and maintain all areas of the kitchen, staff change rooms, and back entrance of the building (ex. flood lights in back entrance, fluorescent lights, etc.) to ensure safety and security
· Execute any other duties as requested by the Executive Chef
